Ingredients
Potatoes
4 medium-to-large potatoes, washed
Olive oil
Potato seasoning (mix, keep in a shaker)
Smoked paprika
Black pepper
Salt
Onion powder
Garlic powder
A small amount of cayenne
Bacon
Thick-cut bacon
For assembly
Flour tortillas (or corn tortillas for gluten-free)
Shredded cheddar or spicy cheddar
Fresh cilantro (optional)

Roast the potatoes
Cut the washed potatoes into ~¾-inch cubes.
Place in a bowl of cold water and rinse several times to wash off as much starch as possible.
Parboil just until they begin to soften — not fully cooked.
Drain in a colander and let them steam dry.
Return to a bowl, drizzle lightly with olive oil, and toss to coat.
Spread in a single layer on a parchment-lined baking sheet — every piece touching the parchment, not stacked.
Season generously with the potato seasoning.
Roast at 400°F for 10 minutes. Flip, add a little more seasoning, and roast another 10 minutes.
Continue in 5-minute increments until crispy outside and soft inside.
Cook the bacon (any method)
Cook the thick-cut bacon however you like — skillet, oven, griddle, or your own favorite method. All work well here.
Marcus's preferred method is smoking it (see the note below), but that's a flavor preference, not a requirement — the recipe is great with bacon cooked any way.
Warm the tortillas
Flour: stack in a microwave tortilla warmer with a damp paper towel under and over the stack, and microwave 1 minute — they come out warm, soft, and flexible.
Corn (for gluten-free): warm or lightly fry before assembling.
Assemble
Lay a warm tortilla down. Add one or two slices of bacon.
Top with a generous helping of crispy potatoes, then cheddar.
Add cilantro or green onions if you like.
Fold the ends in, then roll tightly burrito-style. Serve immediately while everything's hot.
The crispy-potato method
Three steps make the potatoes: rinsing off the starch, parboiling, and letting them steam dry before they're oiled and roasted. Skip any of them and you trade the crisp exterior and creamy interior for something blander and softer. The single-layer, every-piece-touching-the-pan rule matters too — crowded potatoes steam instead of crisping.
Bacon: smoked is the preference, not the requirement
Marcus's favorite is thick-cut bacon smoked on a Traeger — start it on a cold smoker, let it smoke as the grill climbs to 225°F, hold 30 minutes, then bump to 400°F for about 7 minutes, flipping and rearranging so slices in cooler spots move to hotter ones, and finish to your preferred crisp. That said, the recipe doesn't depend on a smoker — skillet, oven, or griddle bacon all make great tacos. The smoke is a bonus, not a gate.
Tips
Mix the potato seasoning ahead and keep it in a shaker for easy, even application on future batches.

Dietary note
