Ingredients
Chicken — Option 1: breaded
1½–2 lb gluten-free breaded chicken breasts or tenders
Cook per package directions in the air fryer
Chicken — Option 2: seasoned grilled
2 boneless, skinless chicken breasts
1–2 tsp olive oil
1 tsp kosher salt
1 tsp black pepper
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
Salad
2 large romaine hearts, chopped
½ cup gluten-free Caesar dressing (more to taste)
½ cup freshly grated gluten-free Parmesan
6–8 slices bacon, cooked crisp and crumbled
½ tsp Italian seasoning
Freshly ground black pepper, to taste
Croutons (for guests who aren't gluten-sensitive)
Cook the chicken
Breaded: air fry per the package directions until crisp and cooked through.
Grilled: pound the breasts to even thickness, coat lightly with olive oil, and season generously with the salt, pepper, paprika, garlic powder, and onion powder. Grill over medium-high or cook in a hot skillet 5–7 minutes per side, until 165°F internal. Rest 5–10 minutes, then cube. Let it cool slightly before it goes on the salad.
Build the salad
In a large bowl, combine the romaine, Caesar dressing, Parmesan, crumbled bacon, Italian seasoning, and black pepper. Toss until the lettuce is evenly coated.
Add the cubed chicken and toss gently once more, just to distribute it.
Finish & serve
If serving guests with celiac disease or gluten sensitivity, plate their salads first — before any croutons go in.
Add croutons to the remaining salad, toss lightly, and serve immediately.
Notes from experience
Let warm chicken cool a few minutes before it hits the bowl — straight off the heat it wilts the romaine. Add extra Parmesan, dressing, or black pepper at the table rather than overdressing up front; you can always add, not subtract.

The croutons are the one gluten item, which is why they go in last: plate the gluten-sensitive servings first, then add croutons to the rest. That one step lets the same bowl serve everyone.
Storage
Best eaten fresh — a dressed Caesar doesn't keep, the lettuce softens within hours. If you want leftovers, store undressed romaine, chicken, and toppings separately and assemble per serving.
