Everyone builds their own foil packet from a spread of sausage, pepperoni, shrimp, potatoes, and vegetables, seals it tight, and sets it in the campfire coals to steam and char. Name each packet, cook, and unwrap your own dinner. As much a camp activity as a meal.

Best for: campouts, beach fires, and feeding a group that never agrees on toppings. Scales to any number — one packet per person. Most of the prep can be done at home and packed in a cooler.

Build
Give everyone a large sheet of heavy-duty foil (double it if yours is thin).
Each person piles their chosen proteins and vegetables in the center. Cut potatoes small — they take the longest to cook, so smaller pieces keep pace with everything else.
Season, add a little oil or butter, and hold the cheese for the end (it scorches if buried).
Fold the foil into a sealed packet: bring the long edges together, fold them down in tight creases, then fold in the ends. Leave a little air room; don't wrap it skin-tight.
Write each person's name on their packet with a marker.
Cook
Let the fire burn down to glowing coals — you want steady heat, not open flame.
Set the packets on the coals. Cook 20–30 minutes, turning once with tongs about halfway, until the potatoes are tender. Hard vegetables and dense potatoes set the timing.
Open one packet carefully (steam is hot) to check. If the potatoes give easily, it's done.
Finish
Open the packet, add cheese and a scatter of cilantro, and let the cheese melt from the residual heat.
Eat straight from the foil or tip onto a plate.
Notes from experience
Coals, not flames. Open fire chars the foil and burns the outside before the potatoes cook. Wait for the fire to settle.
Potatoes are the pace-setter. Dice them small and everything finishes together; leave them big and the meat overcooks while you wait.
Shrimp cooks fast — if someone's packet is shrimp-heavy, it'll be done sooner, so check those first.
Add cheese at the end. Buried in the packet from the start it scorches against the foil.
Make-ahead for camp
Slice the sausage and pepperoni, cut the vegetables, and dice the potatoes at home; pack them in a cooler in labeled bags or containers. At camp it becomes an assembly line — everyone builds, you cook. Keep shrimp cold until packet-building.
Dietary note
Built gluten-free if you use GF sausage, pepperoni, and cheddar (as the shopping list specifies) — but it's only as gluten-free as the brands chosen, so it's tagged conditional. Naturally adaptable: skip the meat for a vegetable packet, or skip the cheese for dairy-free. Each packet is its own meal, so dietary needs are easy to handle per person.
