Ingredients
Turkey & sauce
2 lb ground turkey
4 cloves garlic, minced
1 small piece fresh ginger, peeled and finely grated
1 tbsp sesame oil
⅓ cup tamari
2 tbsp brown sugar
2 tbsp sriracha or chili paste
1 small zucchini, sliced into thin half-moons
Red pepper flakes, to taste
To serve
2 cups jasmine rice
⅓ cup sesame seeds
4 green onions, chopped
Romaine leaves, whole for wraps or shredded for serving
Instructions
Heat a large skillet over medium-high. Add the ground turkey and cook, breaking it apart as it browns. Stir in the garlic and ginger and cook until the turkey is cooked through.
Stir in the tamari, brown sugar, and sesame oil. Let it simmer together a minute or two.
Add the zucchini half-moons and cook 3–5 minutes, until tender but still slightly crisp.
Stir in the sriracha or chili paste, and red pepper flakes if you want more heat. Taste and adjust the tamari, sesame oil, or sriracha.
Meanwhile, cook the jasmine rice per the package.
Toast the sesame seeds in a small dry skillet over medium heat, stirring often, until lightly golden and fragrant — watch closely, they burn fast.
Serve over jasmine rice topped with shredded romaine, toasted sesame, and green onion — or spoon into whole romaine leaves for lettuce wraps.
Notes from experience
The sauce is meant to be adjusted: more sriracha or pepper flakes for heat, more tamari for salt, a little more brown sugar for sweetness. Taste before you serve.
Don't walk away from the sesame seeds. They go from golden to burnt in seconds, and burnt seeds turn the whole dish bitter.
Pull the zucchini while it still has a little bite — a few minutes too long and it goes soft and watery.
Two ways to serve it
Over jasmine rice it's a full, filling dinner. In crisp romaine leaves, no rice, it's a lighter meal that eats like an appetizer. Same skillet either way — decide by how hungry the table is.
Storage & reheating
Refrigerate the turkey mixture up to 3–4 days; it reheats well in a skillet and makes excellent leftovers. Keep the rice, romaine, and sesame separate and assemble fresh so the lettuce stays crisp.
Dietary note
Naturally dairy-free and high-protein. Tagged conditional on gluten only because tamari is usually gluten-free but not always, and sriracha and chili pastes vary — check your labels. Serve as lettuce wraps to keep it grain-free, or over rice for a fuller plate.
