Chicken
2 lb boneless, skinless chicken breasts (about 4), trimmed and pounded to ¼ inch or slightly thinner
Batter
2 large eggs
2 Tbsp olive oil
½ cup gluten-free all-purpose flour
2–4 tsp milk (add until it's the consistency of thick pancake batter)
2 Tbsp Slap Ya Mama Original
2 tsp cayenne pepper
2 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp black pepper
Breading
1½ cups gluten-free panko breadcrumbs
¼ cup grated Parmesan cheese

Instructions
Trim the chicken and pound each piece to an even ¼ inch, or slightly thinner. Even thickness is what keeps the whole cutlet cooking at the same rate.
Whisk all the batter ingredients together until smooth, adding milk a teaspoon at a time until it's thick but pourable — about the consistency of pancake batter.
Coat the chicken in the batter and refrigerate 15–30 minutes, or up to overnight.
Mix the breading ingredients in a shallow dish.
Bread only the batch you're about to cook, leaving the rest of the chicken sitting in the batter until its turn. This is what keeps the coating crisp instead of soggy.
Preheat the air fryer to 390°F. Spray the top of the breaded cutlets generously with avocado oil.
Air fry 7–8 minutes. Flip, spray the second side generously, and cook another 2–4 minutes, checking the temperature after 2.
Pull the chicken at 160–162°F. It carries over to 165°F while it rests.
If you're cooking in batches, hold the finished cutlets on a wire rack set over a baking sheet in a 200°F oven. Don't stack or cover them — that's how you lose the crust.
Serving suggestions
Sandwiches with chipotle mayo and dill pickles — the default, and the best of the three.
Chicken Parmesan — sauce and mozzarella over the cutlet.
Sliced over a Chicken Caesar salad.
Notes from experience
Be generous with the spray. It's what browns and crisps the panko — under-sprayed breading comes out pale and dusty.
Bread in batches, not all at once. Breading that sits gets damp and won't crisp.
Pull at 160–162°F and let carryover finish the job. Cooking to 165°F in the fryer gives you a dry cutlet.
Heat level
Real heat — 3 Tbsp of Slap Ya Mama plus 3 tsp of cayenne across the batter and breading. Cut the cayenne in half for a milder version that still tastes like something; leave the smoked paprika alone either way, since that's flavor, not heat.
Storage & reheating
Refrigerate up to 3 days. Reheat in the air fryer at 375°F for a few minutes to bring the crust back — the microwave turns it to cardboard. The breaded cutlets also freeze well after cooking.
Dietary note
Built gluten-free: GF flour, GF panko, and Slap Ya Mama is gluten-free. Tagged conditional because the bun isn't — use a GF bun, or skip the bread. Contains dairy (Parmesan, milk) and eggs.
